A lomi lomi salmon recipe is a staple for any Hawaiian luau. It has several variations, but is simple to prepare. Lomi-Lomi means to massage.
You will find it not only at a hotel luau, but at family luaus and parties, inexpensive roadside restaurants and extravagant hotel buffets. This is a delicious reminder of Hawaii.
Lomi Salmon Recipe
This is a basic and classic recipe.
1 lb salted salmon filet 2-3 fresh tomatoes, peeled, seeded and diced 2 med sized Maui onions (or substitute any mild flavored onion) diced or sliced thinly 3 thinly sliced green onionsTabasco to taste (optional)
Begin by soaking the salmon for 3-6 hours, changing the water several times. Drain the salmon and remove all bones and skin. Shred or dice salmon into small pieces. Add onions and tomatoes (add to taste preference). Massage (lomi) mixture with your hands until thoroughly mixed, add tabasco. Chill. You can add ice cubes to help chill quicker or to keep chilled at table.
If you have unsalted salmon, rub with rock salt or Hawaiian salt and let it stand overnight. Rinse well and soak in cold water for at least an hour, changing water several times. Use in recipe, as above.
It is best served chilled. Add some ice prior to serving to keep it cold. Use as a side dish for your other Hawaiian delights. You can make a beautiful lomi salmon salad by serving in fresh lettuce leaves.
